Mexican Restaurant White Queso Dip



How many of you are mildly obsessed with the white queso dip that you can order at Mexican restaurants?  If you said no, I might just believe that you are from a different planet. There is a little Mexican place by our house, Cozumel, and my girlfriends and I have had many deep and light moments over a bowl of queso at this place.  My friend April even revealed to us that she was expecting while we were anxiously dipping our chips into this delicious queso.  

What can I say, cheese brings people together.  So I was over the moon when I found this recipe on Pinterest and can honestly say that it is as good as any Mexican restaurant I've been to.   I made this for my mother's birthday along with some chicken crepes with a poblano sauce (recipe to come later) and it took everything in us not to fill up on it before dinner.  Isn't that always the case?  

Well, my hotel is basically frozen today so I'm going to camp out by the fireplace with my laptop.  Stay warm out there!! 




Mexican Restaurant White Queso Dip
adapted from Seeded at the Table
1 1/4 pound of white American cheese, chopped into cubes
1/4 cup diced green chilies
1 tablespoon pickled jalapenos, finely chopped
3 tablespoons pickled jalapeno juice
2/3 cup whole milk
1/2 cup cold water
pinch of cumin

Place all of the ingredients in a microwave safe bowl.  Microwave in 2 minute increments.  After each increment, remove from microwave and stir with a spoon.  It will appear watery at first, but as the cheese melts, a thin cheese dip will come together.

Garnish with cilantro and serve with restaurant style tortilla chips.

  2. I’m sure there are a lot of people who are likewise “obsessed” with the Mexican white queso dip. It’s spicy, creamy, and smooth, and so it’s perfect for burgers, burritos, roasted potatoes, and many other Mexican dishes. Good for you that you are perfectly capable of recreating this delicacy at home. Thanks for sharing the recipe!
