TGIF! Do you remember the shows from the original ABC TGIF line-up? If not, let me just refresh your memory:
Perfect Strangers
Full House
Mr. Belvedere
Family Matters
Just the Ten of Us
Step by Step
Boy Meets World
Hangin' with Mr. Cooper
And to make you feel even older, most of these shows ended about 20 years ago! Remember those good ole' days? When all you had to do was go to school and do a little homework. My mom would pack me a lunch everyday and most of the time it included a turkey sandwich. Now there are four kids in my family so my turkey sandwiches were not as elaborate as this one... but they were always good and made with lots of love.
Speaking of siblings, my brother Kevan and Lauren's wedding photos are done and they are un-freaking-believable. Christopher and Julie First with ZMedia did and amazing job. Click here for a preview of their big day. Seriously.. can they get any cuter?
I realize it is a pretty bold proclamation to call this "The Best Turkey Sandwich... Ever", but it is. For reals. One side has roasted garlic mayo and the other is slathered with smashed avocado. Take a chance and switch up your typical cold cut routine. Jazz up that turkey.
Saute the minced garlic in a little olive oil. This takes the edge off so you can eat this for lunch and not scare everyone in your office away with your potent breath.
Mix the garlic with mayo, salt, pepper and touch of lemon juice.
Slice and core the avocado.
Sprinkle a little salt and pepper along with a little lemon juice
And smash with a fork.
Slice up some roasted red pepper.
Spread the mayo and avocado on each side of the bread. Our bakery had some amazing whole grain black Russian bread.
Top with turkey
Then roasted red pepper
Then some alfalfa or broccoli sprouts
Finally, cheese please!
The Best Turkey Sandwich... Ever.
Bread of your choice
Garlic mayo
Avocado spread
Turkey
Roasted red pepper, chopped
Alfalfa or broccoli sprouts
Swiss cheese
Spread each slice of bread with the garlic mayo and the avocado spread. Top with turkey, red pepper, sprouts and cheese. Slice and serve.
Garlic Mayo
1 teaspoon olive oil
3-4 cloves of garlic, minced
1/4 cup mayo
pinch of salt and pepper
1/4 lemon, juiced
Preheat small pan over low heat and add olive oil. Add garlic and saute until garlic is soft and slightly toasted. In a small bowl, mix garlic and olive oil, mayo, salt, pepper and lemon juice.
Avocado Spread
1 avocado, sliced and pitted
pinch of salt and pepper
1/4 lemon, juiced
In a bowl, mash avocado, salt, pepper and lemon juice with a fork. Leave some chunks for i bit of texture. If you need to save this for later use, press saran wrap directly over the top of the spread so it does not brown.
I LOVE a good sandwich. My mouth is watering over the garlic mayo, sprouts, and avocado spread.
ReplyDeleteAlso, TGIF TV was a weekly tradition at my house growing up!
Thanks Sarah!
DeleteGlad to have found this rather unique recipe. Made it tonight, no changes, absolutely delicious and will go straight to my regular rotation. Thank-you! Nice photography, by the way.
